I am not able to get v.in.arc to recognize more than one column in
the .txt file -- I can't understand what's wrong since it looks fine to
a text editor.Has anyone successfully done this conversion and managed to keep attribute

I'm not sure that I understand your question properly. I believe that v.in.arc
only allows you to select one column for the actual attribute; if you want
multiple attributes, you'll have to import the coverage into multiple GRASS
vector layers, specifying different attribute columns each time.
