I was going to put this into the tracker, but I'm not sure if I'm supposed to assign it to someone, and I didn't want it to get lost.
In Geonetwork 2.1 final, when you go to the feedback form, it shows four entry fields, but only 3 labels. The third one is missing. When I went into the feedback.xsl file to see what was going on, I noticed that the field was called email, but the label wasn't coming up. It was looking for '/root/gui/strings/emailAddress', but there is no such entry in strings.xml. If you just change it to '/root/gui/strings/email', it fixes the problem.
