The gbif profile of eml is already present as Jose mentions, though it looks much simpler than the full eml schema (https://knb.ecoinformatics.org/#external//emlparser/docs/index.html), but it may be a good place to start. We had a requirement to support indexing and searching of eml-gbif a few years ago, hence the eml-gbif schema in GeoNetwork. I'd be keen to hear about your (or any) attempts to integrate the full eml schema into GeoNetwork!

To add support for a new schema you need to develop it in GeoNetwork, it's
not just adding the xsd. You can find some documentation about this here:
You have also a metadata profile repository with some metadata profiles
already available: GitHub - geonetwork/schema-plugins , where I
see this one:
schema-plugins/eml-gbif at develop · geonetwork/schema-plugins · GitHub , but
not sure if it's the same as the one you point (eml).
You can clone the repository GitHub - geonetwork/schema-plugins
and copy the folder eml-gbif to you GeoNetwork instalation
geonetwork/WEB-INF/data/config/schema_plugins
