Hi Giuliani,
That upgrade should be easy. In fact, the version installed with GeoNetwork is a version that only has some of the demo data removed and two layers have been configured for GeoNetwork, otherwise it is not customized.
You could install GeoServer somewhere on your system and configure the two layers on that instance. The link between the GeoNetwork map viewer and the GeoServer layers is configured in ../web/intermap/WEB-INF/mapServers.xml
The main thing to take care of is that GeoNetwork and GeoServer run on the same web server (and thus with the same port), or in separate web servers with different ports.
