Does someone knows how to convert .dim metadata to metadata format that
geonetwork could handle? Maybe using gdal?

No idea what a .dim metadata looks like
You could write an XSLT that takes a dim as input and generates a valid ISO19115/19139 metadata record. You can use such an XSLT in the different insert/ import services available.

Jeroen is right, an XSLT should be quite easy to use to extract info
from the dimap file. It seems that it has been used to create html :
"Using XML (Dimap documents) and XSL style sheets, a data producer can
get its products behave as if they were plain HTML files to the end user."
