Users' passwords are echoed in both the catalina.out and geonetwork.log files. This is obviously not cool. How does one turn that off?

You can change web\geonetwork\WEB-INF\log4j.cfg and restart the server:
log4j.logger.jeeves = DEBUG, jeeves
to
log4j.logger.jeeves = INFO, jeeves
