I'm using GeoNetwork 2.1.0 RC and I'm wondering how can I update existing
metadata (in database) when XSD schema will change.
How to perform such update?? Are there some services or XSLT transformation
files to do this??

No it will not do that automatically. Only the editor will reflect
change from your schema.
How to perform such update?? Are there some services or XSLT transformation
files to do this??
You could have a look to GAST and the stylesheet used to migrate from
iso19115 to iso19139.
