Before changing/adding metadataallowed i can see some of metadata when
launch search or all when i select the categorie to which they were asigned.
Are there any restriction on presentationForm metadata attribute to make
searchable?

How are you?
The presentationForm is used to distinguish between digital and paper related metadata. You can make it more specific if you wish, indexing every option item. You would need to change the search form (to have a dropdown of the options) and the lucene index XSL file. See file ../web/geonetwork/xml/schemas/iso19139/index-fields.xsl line 58 for this (and the same block in the iso19115 file for the old ISO19115:DIS format. Don't forget to rebuild the index by removing it and restarting GeoNetwork.
