There should be instructions in Quickstart:Configuring GeoServer on how to tell web servers/Jetty to block access to the admin web tool.
(in the same section the "<i>ant war</i>" formatting should be corrected so it is displayed correctly)

Actually we just need to update the docs, as the login can be changed in
the admin tool. Users who are not logged in will only be able to access
the welcome and demo pages. The login can be changed (when logged in)
from Config->Server->Password.

Cool. Thanks for the feedback. And please let us know about anything
else that needs updating in the docs - they are the main thing that needs
updating for 1.2.0
