I am trying to implement app-schemas with PostGIS data tables. I have Tomcat
running Geoserver, set up on an Oracle VM VirtualBox. After creating the
mapping file and datastore xml file, the store correctly finds the mapping
file location, but I keep getting the error "Unable to parse complex
datastore config" when I try to open up the layer.
I've attached my mapping and datastore files; any suggestions are most
welcome. If anyone has example files for me to try that would be great
(cannot seem to get the geoserver tutorial to work...).

Christy,
do you have a "stack trace" that details the origin of the error? You should be able to find this at the console during startup, in your tomcat logs, and in geoserver.log.
I strongly recommend that you persist with the tutorial and get it working before making changes. Does the tutorial configuration give you the same error?
What versions are you using?
Kind regards,
Ben.
