Hey all,
I found this page: http://docs.codehaus.org/display/GEOSDOC/Custom
+projection+definition+in+Geoserver+1.5.0+(onwards) about defining your
own custom projections.
Is this still the right way to do this? I just tried it and it didn't
work out for me, so before I go digging into the code, I'm just curious
about whether I'm on the right path.

Yup, that's still the right way. What went wrong? Was there any epsg.properties file there already? If so then do the other projections defined there work for you? The release configurations now always include a file there, so you can grab one of those and try it out.

Ahh, an EBCAK.
I tried just hitting 'load' on the geoserver web ui, thinking this would
pick up the new epsg.properties file, but I had to restart geoserver
completely. Now it works great.
Thanks chris,
