I'm pretty sure it does. You'll need the WCS branch, but your data will
be available through WMS as well (just like the vector side, configure
once, and it's available in WMS as well as W(F|C)S). The WCS stuff is 0.2
alpha, so still working bugs out, performance isn't what it could be, and
a user was having trouble getting geotiff to work, and there aren't many
docs yet. But it should be possible, and hopefully Alessio and Simone
will answer soon.

sorry for answering with such a delay but I got back on monday from Norway where I spent one month in live demo where we used GeoServer pretty successfully. Alessio is on vacation this week and apparently he forgot that he is supposed to be the referrer for the WCS and therefore he was supposed to send out an email to warn everybody out of his absence. Anyway, I will be around and if anybody has questions or whatever I will be glad to answer.
Back to the topic.
WCS support geotiff even though as I said in a previous email we are focusing now in supporting BIG geotiff since at the beginning there was no time for fancy code on this issue. Just use the format for taggef imade with georefencing. If you ran into problem let me know. If you have suggestions ar complains let me know as well.
WCS support reading and writing gtopo30 quads. A gtopo30 quad is a set of 8 files from USGS which contains between the others a DEM file (16 bits integers elevation values). If you meant that as DEM (that is a gtopo30 file) we support it, if you meant a simple .DEM as it is, file we don’t at the moment but if we get enough requests for that we will provide support for it since it should be not very difficult to achieve.
I hope I cleared out some of your doubts, anyway write again whenever you feel like and I will try to help you out.
