Is there a way to enable time dimension through the REST API for
coveragestores? As far as I understood, this would be possible when creating
an empty imagemosaic. I didn't find anything regarding coveragestores.

this is a question for the user list (the devel list should be used when you want to discuss changes to GeoServer that you are
going to contribute via a pull request, or anything else related to the development of GeoServer itself, not its usage).
