I was playing with GeoServer 1.7.x today and all of a sudden
all layers my data dir went bye bye... all the info.xml files
disappeared from disk.
Did anyone experience this as well? scary! Any idea on why
this might happen?

Oops. I just had the same experience and lost half a day of work
I don't think I was even near the save button, was restarting GeoServer a lot. What could potentially have happened is that I had a mixture of geotools 2.5-RC1 and 2.5-SNAPSHOT.
I was having issues with my WFSV tables, http://geoserver.pastebin.com/m74f53a0f . (There may very well be something wrong with them, so it doesn't cause me too much concern.)
Guess I'll look into it tomorrow,
