it seems we're lacking documentation on how to run the
WCS part of the cite tests here:

Well, besides giving the capabilities, I can have all 59 tests
passing by giving 128mb or ram to geoserver and by using 2/2
as resx/resy to avoid having too big images to be generated (
using native resolution of gtopo30, which is 0.0083, makes it
return a very big file and my poor adsl takes forever to
return it).
Anything else?

I'm updating the running cite instructions to deal with WCS and
the unified cite testing config.
