GeoTools and GeoServer master are moving to Java 8, once CITE tests and builds are working again. This will include moving to Java 8 JDK, setting source+target to 1.8, cleaning up failures on Jenkins, and sanity testing of build artifacts.
Any volunteers to lead this process?
Kind regards,

I don't have the experience or time to lead it, but I can say that I've been
building both GeoTools and GeoServer on JDK8 for a while. That is usually the
only configuration I actually test locally.
