My name is John Hudson and I am working on a WFS-V Red-Lining project with GeoServer 2.0.0 (utilising the WFS-V extension) and have a very similar issue.
Read/Insert works fine for wfs-transactions but on modify/delete I get the same error you are receiving:
Could not locate FeatureStore for 'store_name'
Even stranger is the fact it works correctly (insert/modify/delete) on my Windows XP development machine but copying the same GeoServer to a unix environment causes the error to occur.
I may move back to an older version of GeoServer yet but thought it would be useful to report my findings.

if i try a wfs-t update from my openlayers application i get this error. the openlayerscript works very fine with a other project on the same geoserver. i createt a new copy to create an new project and createt a new workspace and store for the data in geoserver. I changes the openlayers script an i see the layer from the postgis database but i can't modify or create new ones.
