Native JAI is causing coverages to throw exceptions, including in getCapabilities requests. This happens even with a default WAR unpack.
You can remove the native libs, restart the servlet container (and geoserver) and then put them back, restarting the servlet container again to fix the problem.
This was raised on the geoserver-users list but we didn't know then that it was native JAI:

Seems to be only when geoserver 2.1 is initially unpacked on a server that already has native JAI installed.
