Udig 1.3M3 has some really nice SLD editing capability. At the beginning of the SLD tutorial, and probably a few other places as well, we should point to how to use udig, export the sld, and upload to GeoServer. This might even be worth of a tutorial in itself, as the 'easy' sld way, and then use the current one as the more advanced way. Most users will just want a gui tool they can use. More advanced users will be in to the specifics of creating an SLD file. Though uDig can also be used to start it, refining the exported SLD.
One thing to definitely note is that 'fully validate' on the udig created sld will fail. Hopefully we can get them producing validate-able SLD. But if people don't check that box it will definitely upload and work fine (which makes sense as we use the same sld code).
