The netcdf-out plugin appears to require gt-coverage-api-.jar and gt-netcdf-.jar which are not included in the geoserver--netcdf-out-plugin.zip but can be found in geoserver--netcdf-plugin.zip. Perhaps it was assumed that netcdf-out would be installed alongside the netcdf plugin? Discussion: http://osgeo-org.1560.x6.nabble.com/Smoke-testing-2-8-1-release-artifacts-td5237486.html geoserver-2.8.1-netcdf-out-plugin.zip on Sourceforge has been patched to include the two missing jars.
