I am looking at creating a new plugin for the Geoserver web coverage service branch.
Is there any documentation, guides, steps which can guide me in doing so?

What kind of plugin? If it's just a new coverage format then check the GeoTools docs and examples.
If it's more extensive, you'll want the 1.4.x branch, see: http://docs.codehaus.org/display/GEOSDEV/Home Particularly: http://docs.codehaus.org/display/GEOSDEV/3+A+Simple+PlugIn and indeed most all of: http://docs.codehaus.org/display/GEOSDEV/4+Programmers+Guide
But the best thing to do is probably just to describe what you're thinking of doing, and some kind people on the list may help out with suggestions.

But, depending on what type of plugin you want to create, the wcs stuff may or may not be set up to be pluggable.

Hi Simone,
I am looking at creating a plug-in for Geoserver WCS branch. I want to create a new plug-in so the request getCoverage can support a new file format. So far, I've worked out I have to implement these four interfaces from GeoTools,
Format, GridCoverageReader, GridCoverageWriter, GridCoverageFactorySpi.
Wrap them up in a jar, put it on the classpath and Geoserver will do the rest.
I was hoping someone could point me to some documentation which gives any more advice, technical details of successfully creating a plug-in.
