I feel like this is something simple I must be missing, but I'm having trouble phrasing my question in a way that gets me any usable results from google. Essentially, I'd like to turn off certain versions of a service, but not disable the service entirely. No WCS 1.1.1, for example, but 2.0 is acceptable. This is on GeoServer 2.6, in case this is something introduced later. Any guidance on how to selectively support only certain OGC versions?

In general, we don't have this ability, although it would be nice to add it
(help welcomed).
For the specific case of WCS, the standard changed so much between versions
that we had to write three separate implementations,
so I believe that just removing the jar of the implementation you do not
want from the service should do the trick (from geoserver/WEB-INF/lib)
