I have prepared a trunk version of the geoserver code with eclipse
using developer's guide, but I'm interested mainly in Geoserver SDE
and Oracle plugins.
How to retrieve trunk version of this code, and any link to technical
documentation available (excluding plugin documentation in the
geoserver website)?

GeoServer uses GeoTools for all data access, so you'll have to
grab GeoTools trunk. On the geotools site you'll find a similar
developers guide. ArcSDE is in the modules/plugin section,
whilst Oracle is in the modules/unsupported section (oracle data
store has currently no maintainer).
