The best forum for questions about how to use Geoserver is geoserver-users. Geoserver-devel is developer oriented, about coding and such.
However, it could be that you would not get many answers from geoserver-users either. I suppose that WPS is not very common. I have never tried it myself. I found this document http://geoserver.geo-solutions.it/edu/en/wps/raster_processes.html. Perhaps you could study the gs:CropCoverage process and see how it is done and ask further questions on the geoserver-users list.
