Hello, i am beginner with Geoserver and OGIS (and my english also, sorry for that). I have read some informations around WCS. I want to know if a version of Geoserver with WCS is available now?

You can find some early versions of GeoServer WCS Experiment on sourceforge with an easy installer.
Otherwise you can get the last (under development) release on the Subversion CVS repository here

Thanks, i’m also looking about security on data: is it possible to limit access of data depending on user type or name or anything else? Through Geoserver, Geotools or PostGIS ?

Actually through DACS (distrubuted access control system I think). We have used this with MapServer and GeoServer and uDig with some sucesss.

There are ways in place to let you pass in credentials to the WFS and limit things at the attribute level as well, but nobody has done this for geosever yet.
