Hi Fernando, slow response due to vacation.
The documentation [1] shows you how to add layers or additional grid definitions. Put the resulting geowebcache.xml file into <GEOSERVER_DATA_DIR>/gwc , and it should be read next time you restart GeoServer.
The easiest thing is to start with the default configuration file and modify it to your needs. Let me know if anything is unclear.
