Can geoserver handle a postgres array as a field type?

Nope, that would be a complex feature (attributes with multiplicity > 1). There is a set of modules were complex features are handled, but I can't give you any estimate on how or when they will be integrated
into Geoserver (since they pretty much rewrite a few core modules).
