Well, that's a pretty powerful machine (2 xeon, 2gb memory, raid disks), but look at this one:

This one is running on a mighty dual pentium III (no kidding) 
What they do have in common is that both aren't serving maps
right out of GeoServer, but they are using TileCache in the
middle. That completely hides tile generation times. So if you're
about to serve static maps, or you do have a sizeable part
of your map stack that is static, give TileCache a try.

It is a dual 2.8 GHz Xeon with 3 Gb of memory. The load is currently 0.05 and memory usage is 800 Mb, though it's nice to have at least 2 Gb so that files on disk can be cached in memory.
Note that, if you are just using the demo page, what you are seeing is not really GeoServer, but TileCache running on Apache and mod_python.
