Is there a kind of tutorial how to do Cascading with WFSs?

No really unfortunately. But the wfs data store is built in geoserver (1.7.x). So if you go to create a new datastore and select "Web Feature Server", supply the capabilities url, and it *should* work. I say *should* because wfs server implementations can behave quite different even though the protocol is "standard".
