Yes that does make sense!
Would you recommend for datasets that are updated every day, perhaps it is
better to serve over WMS to ensure the correct data is always displayed, or
just set a value for example 3,600 to the expire options so that the cache
is updated every 2 hours, but layers can be drawn up quicker?

Err well yes, but at that point you'll have a WMTS service that does no
caching
and that's sensibly slower than a WMS service due to metatiling, disk
storage and the like...

Hi Chris,
I don't think there is a built-in way to expire tiles at a particular time
of day/night,
but once your scripts are done updating the data, you could make them
call truncate or reseed on the GWC REST API:
