Is it possible to export all of your layers as shapefiles?

Yes, there is a shapefile output format you can use with WFS GetFeature operation.
Keep in mind that the shapefile format is limited, so not every data product you publish may be represented as a shapefile (for example a table with multiple geometry columns).
