Is it possible to pull out how many times a WMS or WFS layer has been accessed from Geoserver logs? Or would I need to use third party software – any suggestions gratefully received.

It you have it set at INFO level, you should be able to, but it's going to
take some time to get the right
log filtering setup.
For that purpose I'd use the monitoring extension instead, either in the
database or auditing mode:

Out of curiosity, is there a live demo/example of the monitoring extension running on a test/production service somewhere that can be shared? I’d be interested to look at it and see it running without having to set it up on my own systems.

Not really, the monitoring extension GUI in its default status is not that
useful,
it only shows recent data, to make good use of it you either have to:
* have every request be stored in a database and then use the REST api, or
direct db access, to gather data and status, however in our experience
this
is not working well as the database quickly gets millions of rows in the
logging table
and slows down a lot
* use the audit mode, and then setup some external tool to parse the
records and
build stats (that's what we normally do)

Ok, I did dabble with it briefly last year but just the live stuff, no database interactivity. I remember the GUI.
That’s more what I’m curious about - are there any examples of them, or presentations where you’ve discussed them?
