So is there a way in 1.5.2 to customize the output coming from the format=openlayers request? I’d like to stylize the output a bit and add some base layers to it. I would just take the default output and add those layers in a static format, but I have (too) many layers I’d like to dynamically render using a customized openlayers request.

No, no customization is possible. We are thinking about creating a real
map client generator, that is, a form where you can specify the OL features and layers to your heart desire, but for the moment we have many other things to do and also lack a good interface framework to
create this new page (which could become quite complex)....
