Hi Mika. While I'm sure there are more production users than we are aware of, some that come to mind are:
MassGIS (http://www.mass.gov/mgis/):
Massachusetts' Office of Geographic and Environmental Information has about 600 layers served via GeoServer.

Trimet (http://trimet.org/):
The Portland mass transit agency has a really nice trip planner with a custom UI.
