I am wonderig if there is a tutorial on using the "Image mosaicking
plugin" to create a Coverage Store from several .tif files with the
corresponding .tfw and .prj files for each in the same folder?
I could not find one, only references to the standalone toolchains on
http://docs.codehaus.org/display/GEOSDOC/Load+NASA+Blue+Marble+Data,
but it seems in Geoservr1.6. the plugin is included as one of the
available options for the creation of a Coverage Store?

You can find some tutorial instruction at this page:

You will need to get the geotools source code in order to build the MosaicIndexBuilder (or you can follow the gdal solution).
