I was wondering if the DataStore interface in GeoTools2 is intended to work
with features only or is there a way to extend it to other types such as
images.

DataStore interface is intended to work with Features only.
I think the GridCoverage interface is the one for images/coverages. It's in use in GeoServer 1.5.0 beta. You can see how its being used. On the GeoTools list Saul has been working to implement ArcSDE rasters through GeoServer, so you may be able to pick up some hints from his experience.
