If you mean with a getMap request, just specify more than one layer
getMap?layers=layer1,layer2,...,layerN&...
Or do you mean on an openlayers map?

Yes, if you look at the map preview which comes build-in with geoserver, look at a map and click on a shape, you will see the identify tool in action.
3. How can I symbol my data with my own style *(without writing code)*
GeoServer uses SLD for its styling engine:

If you don't want to write XML by hand you can try the experimental styler extension:
