So... we've just about completed the development phase of a Geoserver
inplementation, and will be migrating everything over to a production
system in the next few weeks. I'd like to know if I'm going to have
to re-load every layer one-by-one, and also apply a style to each
layer on the new system, or can I migrate the layers over? I have a
bad feeling that I know the answer to this, but I thought I'd better
ask.

If you happen to have a newer version of GeoServer (> 1.5.1, I think) all you need to do is copying the GEOSERVER_DATA_DIR to the new machine and instruct the new instance to find its location [1].
