Hello Roger:
Do you have your own netcdf files that you want to server through
Geoserver? Like Simone mentioned, there are a number of known netcdf
format conventions that are currently recognized by the java netcdf
library.
If you can point us to a sample netcdf file, one that you want to use
in your end result, we can try to display it in Geoserver and then to
get you going with using the netcdf plugin too.

It is a CF convention file of gridded data about sea temperatures. I would
like to setup a WCS service that can query this file for a specific layer in
it named "tos". I haven't worked much with either netCDF or WCS, so this is
proving to be *interesting*. 
Regarding the geotools netCDF plugin that you mention below, can you tell me
how I could try using it to accomplish what I'm trying to do? I will be
working from a fresh install of GeoServer, so I can install whatever is
needed, I'm just not exactly sure what that is, or how to implement it.
