How do I configure GeoServer to read in a load of tiff files in a folder
If tiffs are (geotiff) correctly geo-referenced and homogeneous (look at
the [1]) and can be logically represented in a single layer (map) you could
try to create a mosaic over that folder.

If those tiffs are geotiff but cannot be represented into the same layer
(map) you have to publish them as separate geotiff files.
Note that tiffs are NOT geotiffs, if you are missing geospatial metadata in
images you probably have to apply some pre-processing before trying to
publish them into geoserver.

To publish a store from a single tiff file http://docs.geoserver.org/stable/en/user/data/raster/geotiff.html them publish a layer from that store
To publish a layer made by a single mosaic of a tiff file set http://docs.geoserver.org/stable/en/user/data/raster/imagemosaic.html
To bulk Publishing a set of tiff files evaluate to use the GeoServer Rest interface to write your own shell script http://docs.geoserver.org/stable/en/user/rest/api/coveragestores.html. You can also evaluate to use one of the many opensource batch engines available around plus the GS rest interface.
