Hi Heribert,
Yes, feature type names are read only. However when configuring a new feature type you have the ability to alias, ie provide an alternative name.
To configure a new feature type navigate to:
http://localhost:8080/geoserver/config/data/typeNew.do
Select the type you want from the drop down and click the New button. That will bring you to the configuration screen. Once you set up the metadata Submit, Apply, and then Save.

or in a few words - setup a new datastore, connect Geoserver to your
database, then define a new feature type to one table in your database -
then you have a basic WMS/WFS serving the data as service - basically
this lets you show the data in a rough shape - the work to render the
objects in the way you want to begins ...
