you’re not the first to find the imagemosaic jdbc module too hard to configure.
Some time ago a colleague of mine prepared a small community module that helps some in setting up
its configuration for pgraster:

Being a community module, it is built only for nightly builds, and not officially supported,
but you can give it a try:

Postgis raster is a significant case enough that it would probably deserve an easy custom
store built for it, but we haven’t seen funding towards making that possible yet
