GeoServer doesn't have a way to do this right now. But note that with the google maps api I'm pretty sure you can add copyright information there, just like they do with their little google logo, which should give a much more pleasing output.
Note also that you can do the same with OpenLayers, if you're using that as an abstraction layer on top of Google Maps API.
