Yep, I am using Mapbuilder for a project right now (when it is done I will announce it on the list, but I want to get it perfect first).
Geoserver has built in demos that are done with maobuilder, you can check them out in the demo section of the web-admin page (http://localhost:8080/geoserver/demo.do). Mapbuilder comes with a bunch of good demos. I used them as a reference for building my own maps.

That error is caused by not having the SDK version of java installed. It
looks like you just have the JRE version.
