Hi Anton,
while removeSchema has indeed been added to the GeoTools API,
I don’t believe it has been used in the REST API.
That seems to explain why what you’re trying to do does not work.
I believe the code would have to be modified here, dropping and re-creating
the schema, assuming source and target schema are not the same,
and the target store supports dropping to start with:

This issue has been addressed earlier in the user email list, but I could not find anything else on it. Any suggestions or comments are more then welcome.
