Geoserver can separate the data from the application, setting for the data (vector and raster) residing on a physical server(storage), and application (geoserver) in another physical server?
server1(data) <----> server2(geoserver) <----> client gis

Yes, GeoServer forms the middle tier of a three-tier web application:

The three tiers:
(1) One or more spatial databases that contain vector or raster data
(2) GeoServer connects to the database(s) using JDBC and delivers OGC web services
(3) The presentation layer is a web browser (e.g. OpenLayers) or GIS rich client (e.g. QGIS) that consumes OGC web services
