Well, WFS cascading is experimental, and not fully working at the
moment.
For example, cascading won't work if you try to cascade another
geoserver because of the namespace prefixes included in the
feature type names... it may work properly with other servers
that do not specify the namespace prefix in the feature type
name.

If you want to try, just download the WFS plug here
http://docs.codehaus.org/display/GEOS/Latest
and then provide it with the capabilities link in the
configuration, and enable gzip compression if the
server you're hitting supports it.
Please file jira issues if you stumble into problems

The WFS datastore works like most of the other datastores. Beyond that, I don't know much about it.
I've looked around for documentation on it, but it seems to be lacking. I will look some more, but I don't think any exists =(

It's still not totally up to speed. See: http://docs.codehaus.org/display/GEOSDOC/WFS+DataStore We've fixed a number of the bugs, but I don't think all of them. It'll work with WMS, but true cascading WFS isn't completely there.

Afaik the missing piece is to have cascaded type names in the format xxx:yyy turned into something that does not break GML.
But I was unable to reach consensus on what needs to be done, at least
on a practical side. There were talks about name mappings, but could
not convince the WFS maintainer that a nice switch to wipe out the
: is needed.
