Hi Sandra,
Yes, with QGIS the only option is to split your layer into separate point and polygon layers. It will also save much pain if you will have more clients type OpenLayers etc. later and they should be using the same data. One geometry type per layer is restricting but fighting against it makes you to suffer.

As this is for use primarily in desktop GIS I will probably have to split them off in to 2 tables though.

I believe that QGIS has no way to show both points and polygons on the same layer. MapInfo can do it with its own data but I have no experience on MapInfo and WFS.
Forget the GIS clients because they only hide what really happens from you. Send a direct WFS GetFeature request from your browser and see what it sends for you. The URL is like this
Edit the server name to point to your server and typename to be your typename. Increase maxfeatures little by little. It you can find both kind of geometries from the GML that comes from the server you have confirmed that the issue is in QGIS and Mapinfo and their limited capabilities for showing mixed geometries. If the GML contains only points we must continue our research.

When you wrote ”only the points display in WFS” did you mean that the GML data that comes from Geoserver has only points or do you have some client software in the middle which shows only points on the map?
