maybe this is a stupid question, but what should I do to enable this
checkbox in WFS Service settings?

Hi,
briefly looked in the code, it is expecting a esri.properties file to be found in $GEOSERVER_DATA_DIR/user_projections,
the file needs to contain a map from the EPSG codes to the ESRI wkt representation of the same, something like:
