The front page of documentation http://docs.geoserver.org/latest/en/user/ is listing a bunch of community modules but I think it is not complete. Is there an up-to-date list in some other place?

Don't think so, community modules have no requirement for documentation,
but without it, it's hard to know what they do.
The full list can be gathered by looking at the version control system, but
of course, no explaination, and some
of them might not be building anymore:
